Dovelles are oak planks toasted using Bousinage technology, which can imitate almost all types of aging.
They are used to obtain a drink of the same quality and complexity as after traditional aging in barrel.
Dovelles keep the color and improve the consistency of the drink, giving it shape, concentration and fullness of taste. They give an aromatic complexity (coconut, vanilla, dried fruits, flowers, tea leaves, smoke, spices and other flavors) and tones of oak.
In combination with the drink create organoleptic versatility.
Dovelles are most often used during aging “in flag” in stainless steel vats in the production of white, rosé and red wines, and spirits. The Dovelles diffuse slowly in the drink to offer a very fine oak taste.
Dovelles are produced only from high-quality raw materials after the atmospheric drying for at least 24 months in the open air. Dovelles do not require additional chemical treatment and are ready for direct introduction into the drink.
