<p>Il n’y a rien de mieux qu&rsquo;un fût de chêne traditionnel pour élever une boisson.</p>
<p>Datant de l’antiquité, les tonneaux, les barriques ou encore les fûts, quelle que  soit son appellation, ont été inventé par les Gaulois environ au IIIe siècle av. J.-C., afin d’éviter l’utilisation de récipients peu étanches et fragiles pour conserver des liquides comestibles. Les Celtes autrefois utilisaient le bois de palmiers qui s’avéraient plus difficile à manier et à courber, c’est donc la raison pour laquelle les Gaulois avaient opté pour le bois de chêne pour fabriquer des tonneaux en chêne. Ils étaient plus solides que les amphores d&rsquo;argile et devenaient des récipients dans lesquels les boissons étaient transportées dans tout l&rsquo;Empire romain. Le tonneau présentait un inconvénient important: le vin qu&rsquo;il contenait s&rsquo;oxydait plus rapidement et ne pouvait plus être stocké pendant des décennies, comme dans les amphores.</p>

<p>Les caractéristiques qualitatives d&rsquo;un fût de chêne ont d&rsquo;abord été évaluées en Europe. La France, l&rsquo;Italie du Nord et la Suisse ont créé une véritable révolution dans la tonnellerie au début du XIXe siècle, en commençant à utiliser un tonneau pour élever le vin et d&rsquo;autres boissons alcoolisées précisément dans le but de leur donner un arôme riche et un goût agréable. L&rsquo;essor du commerce au XIXe siècle a permis aux tonneliers d&rsquo;exploiter efficacement les très bons chênes de Russie et d’Ukraine.</p>
<p>Digne successeur de l&rsquo;amphore, le tonneau en bois détenait de facto le monopole de la vinification pendant près de deux millénaires. Les vins élevés en barrique font traditionnellement partie du monde du vin. Pour la grande majorité des consommateurs, il est impossible d&rsquo;imaginer une cave à vin sans fûts de chêne. Parmi tous les récipients existants pour la fermentation ou l&rsquo;élevage du vin, la barrique reste la plus chère et la plus difficile à utiliser. Quels sont les avantages d&rsquo;utiliser un conteneur aussi complexe ? L&rsquo;objectif principal est de créer des vins aux arômes complexes et au potentiel de garde à long terme.</p>

<p>Au fil du temps, on s&rsquo;est aperçu que ce contenant avait des propriétés intéressantes concernant l’élevage du vin, la barrique donne au vin des composés phénoliques, ce qui, au final, permet de parler d&rsquo;une certaine complexité aromatique. Les tanins (composés non volatils) passent difficilement de la barrique dans le vin, mais adoucissent le vin et ses tanins naturels. Ceci est particulièrement visible dans le cas de vins très puissants. La barrique permet au vin de « respirer ». Le bois est légèrement poreux, de sorte que le processus de micro-oxygénation a lieu, le vin change presque comme par magie, mais nécessite également des soins et des manipulations supplémentaires.</p>

<p>Plus tard les viticulteurs ont réalisé que les tanins du bois affectaient le style du vin. Par conséquent, les tonneliers proposent différentes espèces de chêne pour la fabrication des barriques. Parfois, un autre type de bois, comme le châtaignier ou l&rsquo;acacia, peut être utilisé pour la production de barriques.</p>
<p>Grâce aux terroirs différents accouplés à une technique de chauffe et de niveau de chauffe plus ou moins intense de la barrique, les viticulteurs  ont une palette aromatique assez large. Selon l&rsquo;âge du fût, les notes aromatiques seront plus ou moins intenses. Il faut utiliser des barriques neuves pour obtenir des aromatiques puissants. Il est également possible de jouer sur l&rsquo;intensité de ces notes en les associant au vin élevé dans des fûts plus anciens, ceux qui ont eu un ou plusieurs vins et donc conférant beaucoup moins de saveur.</p>

<p>En effet, la chauffe de la face intérieure est une étape primordiale dans la fabrication de la barrique, car selon son intensité, elle peut conférer au vin des arômes de fruits secs, de vanille, de café, de pain grillé, d’épices, de noix, de fumée, de poivre noir, d’amande grillée, de noix de coco ou même de chocolat.</p>

<p>Le contact du bois de chêne permet au vin de stabiliser la couleur, de développer la structure et le potentiel aromatique, révélant l&rsquo;expression de notes fruitées et donnant corps et rondeur aux vins, de rehausser la texture et la sensation en bouche du vin en lui conférant des profils de saveur plus élégants et complexes et en atténuant les notes élevées des arômes. En général, l&rsquo;analyse chromatographique du bois de chêne donne environ 100 composants chimiques.</p>

<p style="font-size: 15px;">L&rsquo;essentiel lors d&rsquo;un élevage en barrique est de ne pas avoir de boisé dominant dans le vin et de ne pas masquer complètement les autres arômes. En général, le vin est élevé en barrique de 12 à 36 mois avant la mise en bouteille. Cette période joue également un rôle dans l&rsquo;évolution et le potentiel de garde du vin.</p>
<p style="font-size: 15px;">Les barriques sont principalement utilisées pour l&rsquo;élevage de vins rouges ou blancs concentrés. Dans certains cas, il est également utilisé pour la fermentation des blancs.</p>
<p>Le vin est mis en barrique pour se reposer et se stabiliser. Cela peut prendre plusieurs mois. Au cours de cette phase, une seconde fermentation appelée « fermentation malolactique » commence, qui donne au vin son gras et sa rondeur.</p>

<p>Lors de l&rsquo;élevage en fûts de chêne, une petite partie du vin s&rsquo;évapore du fût à travers les pores du bois. Le vide ainsi créé dans le fût de chêne peut favoriser l&rsquo;oxydation et le développement de bactéries acétiques, ce qui peut entraîner une augmentation de l&rsquo;acide volatil (vinaigre). Par conséquent, afin de protéger le vin, il est nécessaire de completer et maintenir le niveau maximum dans fût, et ainsi maintenir le bouchon fermé.</p>
<p>En règle générale, seuls les grands vins blancs sont fermentés en barriques, car ils passent cette étape sans la peau, ni les pépins. Certains vignerons pratiquent la fermentation des vins rouges en fûts, à cet effet le fût est placé verticalement avec un fond ouvert, ou le trou de bonde est modifié.</p>

<p>Les différentes tailles des tonneaux varient en fonction de l’histoire et de la géographie des régions viticoles. La taille du tonneaux est également importante, tous les fûts n&rsquo;ont pas la même capacité. Il faut partir du principe que plus la barrique est grosse, moins il y a d&rsquo;échange entre le bois et le vin, donc moins de transfert de notes boisées.</p>
<p>Il existe de nombreuses variétés de fûts en termes de capacité, mais les plus connus sont le fût bordelais de 225 litres et le fût bourguignon de 228 litres, aussi appelé « pièce ». Dans la pratique, il s&rsquo;est avéré que les fûts de 225 l présentaient également un rapport idéal entre la surface des parois du fût et le volume de vin. Par conséquent, ils peuvent être considérés comme «standard», c’est-à-dire les plus utilisés, et aussi suivant la logique de l’unité de mesure utilisée dans les pays anglo-saxons qui est le gallon (gal) (4,54L) ; soit 225 L = 50 gallons.</p>
<p>Il existe encore aujourd&rsquo;hui des fûts de différentes tailles, par exemple la « barrique nantaise » de 230 litres et la « barrique béarnaise » de 300 litres.</p>

<p>Aujourd&rsquo;hui, la situation a changé et le nombre de vins élevés en barriques diminue chaque année, et leur place est prise par des vins élevés dans des récipients neutres avec l’ajout des produits alternatifs de chêne. Il y a plusieurs raisons à cela:</p>
<p>• le prix des fûts, qui ne cesse d&rsquo;augmenter;<br />
• l&rsquo;alternatif est dix fois moins chère qu&rsquo;une barrique, ce qui permet aux vignerons de réduire significativement le coût de production et d&rsquo;être plus compétitifs;<br />
• il est beaucoup plus facile d&rsquo;utiliser des morceaux de bois, le risque de maladies est beaucoup plus faible que dans les fûts;<br />
• la possibilité d&rsquo;ajuster les dosages;<br />
• l&rsquo;utilisation de produits alternatif donne un résultat d’élevage beaucoup plus répétitif d&rsquo;année en année.</p>
<p>Les prix des tonneaux ne cessent d&rsquo;augmenter, en raison de la réduction progressive de la quantité de bois dans le monde entier. Ainsi, depuis plusieurs décennies, les vignerons et producteurs de spiritueux du monde entier utilisent des méthodes d’élevage alternatifs.</p>

<p>Selon les experts, la meilleure méthode alternative d’élevage consiste à prolonger la durée de vie des vieux fûts (fûts ayant eu 3-4 vins). Aujourd&rsquo;hui, il existe de nombreux systèmes différents pour prolonger la durée de vie d&rsquo;un tonneau. Il s&rsquo;agit d’insérer des morceaux de bois chauffés de différentes formes et tailles dans le fût, qui confèrent à la boisson des tanins et des arômes de chêne, tandis que le fût assure la microoxygénation. Cette synergie permet d&rsquo;obtenir des boissons aux nuances boisées bien intégrées.</p>
<p>De tous les vins mis en bouteille, seuls 5% sont passés en fûts de bois. Contrairement à eux, le vin élevé en cuves neutres avec l’ajout des produits alternatifs représente 35 % du marché. Tous les autres vins qui entrent sur le marché sont des vins élevés dans des récipients neutres sans contact avec le bois.</p>

<p>Existe-t-il une différence qualitative entre le vin élevé en barrique et le vin élevé en cuve innox avec des morceaux de bois? L&rsquo;analyse sensorielle ne permet pas de sentir la différence.</p>
<p>Avec des dernières technologies, il est possible d&rsquo;obtenir des boissons de haute qualité tout en préservant la nature. L&rsquo;attitude responsable de chacun envers la nature est extrêmement importante, surtout dans les conditions de la crise écologique.</p>

The word «amphora» is used as an international unification for such a vessel, although the names and their appearances differ from country to country. An amphora is a vase-shaped clay container. Clay jars are considered the earliest wine containers in human history. In Georgia, in the «cradle of winemaking», amphoras are found under the name «qvevri» (Georgian ქვევრი). They have always been used, and in different regions of the country they differ slightly in appearance. For example, in warmer regions of Georgia, kvevri have a more elongated shape, as they are buried deeper in the ground. Georgian kvevri was used as early as 7000 BC. J.-C.</p>

							<p>Historian Levan Pruidze believes that the Georgians started making wine vessels as soon as they learned to work with clay, that is, during the Neolithic era. And although it is very difficult to establish the exact time of origin of the first kvevri, it is known that historically in Georgia, as today, there were two main centers of construction of kvevri — in the west , in Imereti and in the east — in Kakheti. Making a kvevri is a construction, it is built layer by layer, taking your time, letting the previous layer dry well, and taking care not to disturb the proportions. The craftsman who builds a kvevri is called mekvevre in Georgian. In Georgia there is no school that teaches how to build a kvevri, as a rule, knowledge is passed from generation to generation. Levan Pruidze, however, believes that knowledge and experience are not enough — for kvevri to come out, the master must have mystical intuition. «The mystery lies in the fact that Mekvevre can only intuitively determine the proportions and ensure that they are not disturbed during the construction process», explains the historian.</p>

<p><span style="font-size: 1.5rem;">Firing is an equally complicated process: the fire in the oven must burn for three days and three nights, and that’s not a saying from folk tales. The burnt kvevri gradually changes color from gray to orange and here the craftsman must again trust his intuition to determine that the container is ready. Only hornbeam or beech wood is suitable for firing kvevri. From the inside, the new kvevri is covered with a layer of special wax. Outside, the burnt kvevri is covered with a layer of cement that will protect it from underground destruction.</span></p>

							<p>For red wines, the objective is gentle aging to give complexity to the tannins and aromatic finesse. One of the biggest advantages of amphoras is the extremely natural vinification without any «violence». The wine is macerated, infused and extracted gently, long and slowly, which gives incomparably silky tannins even on very tannic varieties such as Mourvèdre or Malbec. Another advantage of wine in amphora is that vinification can take place simultaneously with ageing.</p>
<p><span style="font-size: 1.5rem; letter-spacing: 0.1px;">For the production of wine according to traditional Kakheti technology, kvevri are buried up to their necks in the ground in special warehouses marani (translated from Georgian — «wine cellar», a kind of analogue of the European terms estate, castle, castello or tenuta) and stay there permanently. This Georgian technology belongs to the UNESCO cultural heritage list. During the fermentation process, the skin, grape seeds and stalks rise up and form a dense «cap». Sometimes it is broken up and again mixed with must. The ovoid shape of the kvevri favors the natural circulation of the must. The maintenance of an amphora is easy, which is much more practical than an oak barrel.</p>
<p><span style="font-size: 1.5rem;">Winegrowers choose amphoras to create wines with a pronounced fruity profile. But sometimes, in search of new tastes and aromas, some winegrowers add alternative oak products to the amphora, to enrich the wine with notes of aging. Just like grape seeds and stalks, the pieces of oak remain in the amphora throughout the vinification/aging period. As a rule, oak chips are not used for aging in amphoras, but the staves or cubes.</span></p>

							<p>• untoasted wood — above all, it allows maximum development of fruity notes, reduces herbaceous and reductive aromas, stabilizes the color of red wines, increases the sugar content, strengthens the structure and aging potential of the wine;</p>
<p>• light toast — suitable for wines which require minimal aroma enhancement and higher tannin content. The Light Toast provides a delicate vanilla note and allows the fruity aroma of the wine to develop;</p>
<p>• medium toast — ideal for concentrated red and white wines and mature white wines. This toast imparts signicantly greater complex and toasty aromas; the longer toasting period provides the greater lignin degradation, producing a stronger vanilla aroma;</p>
<p>• heavy toast — ensures almost complete decomposition of the chemical components present in the oak. This level of toast is ideal for wines looking for full impact of complex aromas and flavor notes with a lesser contribution of tannins to the wine structure. The Heavy toast gives a smoky and black pepper taste and aroma to the wine.</p>
